NOT ALL CHOCOLATE IS CREATED EQUAL:
Before it becomes candy chocolate is an agricultural crop, growing 20 degrees above or below the Equator methods of production and processing and the way farmers are treated varies enormously, from indentured servitude to economically sustainable trade. Of course, flavors vary too, depending on cocoa variety, terroir, and production methods. So before you do your chocolate shopping, join Maya Schoop-Rutten, owner of chocolate Maya, for a tasting of single origins chocolates or delectable truffles.
