NO REFRIGERATION! A well tempered chocolate should never go into the cold and humid box... Humidity will cause the cocoa butter crystals to rise to the top of the chocolate causing the "bloom" (gray/white discoloration of the chocolate). We strongly believe the chocolate taste will be altered.
The best storing place for chocolate is a dry cool place like a pantry. A nice big wood box is ideal for storing your favorite chocolate bars: Remember that chocolate absorbs odors like tea does, so do not store chocolate next to strong spices, fruit or chemicals. |
